The Gem State is wedged between Washington and Montana in the Pacific Northwest. Its wide southern border is shared with Nevada and Utah, and it has a short border with British Columbia, Canada, to the north. The Cutthroat trout, and important fish for anglers, is Idaho’s official state fish. Besides wild trout, farmed trout are a big Idaho industry. The huckleberry, native to Idaho, is the state fruit. Huckleberries grow wild in Idaho. To make pies with fresh, wild huckleberries, Idahoans compete with bears for the delicious deep purple berries. Famous for potatoes, Idaho might soon became known for winemaking as well. In March 2007, the Snake River Valley earned designated as an American Viticultural Area, the first such distinction granted to a wine-growing area in Idaho. Incidentally, crisp Rieslings are leading the way in the Snake River Valley – a varietal that pairs wonderfully with fried potatoes!

Yellow Chicken

Put this in the "not healthy but yummy" section of your recipe box. Of course, I had to fiddle with the recipe a little: added a squeeze of lemon juice, salt & pepper, a smidge of sugar, and extra worchestershire. It was pretty yummy. Turmeric is a fun spice, but it dyes things yellow. I served it with winter squash and green peas. It looks very autumnal on the plate. And it tastes good. And the 2 yr old loved it!!

Asian Chicken Noodle Salad

This is a great salad. It's sweet, crunchy, and offers a wide variety of fresh vegetables in the mix. This a salad that goes great as a side dish to any entree or alone in a bowl. My wife and I have made the recipe with and without the chicken and preferred it without chicken as simply a side salad. We changed the recipe a little by decreasing the dressing by half (we noticed there was a lot of dressing pooled in the bottom of the bowl when fully prepared) and replaced pine nuts with slivered almonds (pine nuts are just so expensive). We've shared this salad with family and everyone approved. We will be adding it to our recipe box.

Pizza Casserole

I used this recipe on Fri. the 3. I made this for my parents and sister for dinner. I substituted spaghetti sauce for the pizza sauce and a package of pepperonni that was already sliced for the pepperonni sausage. I am only fifteen and this is the first dinner recipe that I have ever used and it turned out great. There was none left over.
